Winemaking :

  • Gain knowledge of the winemaking process for white and rosé wines.
  • Understand the winemaking process for red wines.
  • Learn about the aging process of white and red wines (in vats or barrels).
  • Explore other types of wines : sparkling, fortified, and sweet wines.

    Winemaking

    • Engineering of pre-fermentation processes.
    • White and rosé wines : must and juice preparation (destemming, crushing, pressing, SO2 addition), and fermentation.
    • Red wines : Must and juice preparation (destemming, crushing, SO2 addition), maceration/fermentation, maceration techniques for enhanced extraction, pressing, and malolactic fermentation (MLF).
    • Barrel aging for white and red wines.
    •  Special wines and techniques : thermovinification, flash expansion, carbonic maceration, unique vinification methods, sparkling wines, fortified wines, and botrytis-affected wines.
